Stuffed Crabs

Ingredients
- Blue Crabs 3 pieces
- Butter 2½ tablespoons
- Chopped Sage Leaves 1 teaspoon
- Fish 5 oz
- Meyer Lemon Juice 2 tablespoons
- White Sauce 1 teaspoon
- Breadcrumbs 1 tablespoon
- Grated Pecorino Pepato Cheese 2 tablespoons
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Thoroughly wash the crabs under cold water using a brush.
Step 2
Tie them and drop them alive into boiling salted water.
Step 3
Cook for 10–15 minutes.
Step 4
Carefully remove the shell from the crabs without damaging it, and remove the claws and sponge-like meat.
Step 5
Cut the good meat into pieces and add the meat extracted from the claws.
Step 6
Sauté in 1.5 tablespoons of butter the chopped parsley, then add the crab meat, boiled fish, salt, pepper, lemon juice, and white sauce.
Step 7
Fill the crab shells with the resulting mixture and place them in a dish with the filling side up.
Step 8
Drizzle with melted butter (1 tablespoon), sprinkle with breadcrumbs and grated cheese.
Step 9
Before serving, place in a preheated oven at 410°F for 15 minutes.
Step 10
The fish can be replaced with 1 cup of breadcrumbs from stale white bread.
