Description
If desired, the meat filling can be replaced with a filling made from rice, mushrooms, and onions; in this case, add 2–3 raw eggs to the filling.
Ingredients
- Green Papaya 1 head
- Meat 20 oz
- White bread 5 oz
- Milk ¾ cup
- Sour Cream 1 can
- Vegetable Oil 3 tablespoons
Step-by-Step Guide
Step 1
To prepare the stuffing, take a small whole head of cabbage, remove the top leaves, cut out the core, and place it in boiling salted water.
Step 2
When the cabbage is cooked enough that the leaves do not break, remove it from the water and place it on a sieve to drain.
Step 3
For the filling, rinse the meat, pass it through a meat grinder, mix it with the bread soaked in milk, and grind it again.
Step 4
Add oil, salt to the resulting filling, and mix everything well.
Step 5
When the cabbage cools, separate the leaves, lightly salt them, and fill them with the meat mixture, then fold the leaves back to form a head, place it in a skillet, drizzle with oil, add broth or water, and put it in the oven for an hour.
Step 6
15–20 minutes before baking is done, drizzle the cabbage with sour cream.
Step 7
Transfer the finished head to a serving dish, cut into pieces, and pour over the strained sauce in which the cabbage was stewed.
