Ingredients

  • Escalopes 4 pieces
  • Salt to taste
  • Ground Black Pepper to taste
  • Garlic 5 cloves
  • Grated Pecorino Pepato Cheese 5 oz
  • Prosciutto 4 slices
  • Fresh basil leaves 7 pieces
  • Olive Oil ½ cup
  • Onion 1 head
  • Passata Tomato Sauce 5 tablespoons
  • Red Grape Juice 1 cup
  • Campbell's Beef Broth 1 cup
  • Baking Tomatoes 1 can

Step-by-Step Guide

Step 1

Season the pieces of meat with salt and pepper. Finely chop the garlic and rub ½ teaspoon of garlic onto the pieces of meat. Sprinkle 1 tablespoon of pecorino cheese on top. Place a slice of prosciutto and a basil leaf on the narrow side of each piece of meat. Roll the beef into a cylinder and secure with toothpicks.

Step 2

Heat the oil in a skillet over high heat. Add the beef and sauté for about 6 minutes.

Step 3

Then transfer to a plate. Lower the heat to medium and sauté the chopped onion and remaining garlic until soft. Add the tomato paste, stir, and remove the skillet from the heat.

Step 4

Next, pour in the wine and return the skillet to high heat. Cook until the wine evaporates, then add the broth. Bring to a boil, add the browned pieces of beef and remaining basil. Bring to a boil again, reduce the heat, and simmer for about an hour.

Step 5

Transfer the cooked beef to a plate and remove the toothpicks. Cover with foil. Blend the canned tomatoes into a puree. Pour the resulting puree into the skillet where the beef was cooked and bring to a boil. Season with salt and pepper.

Step 6

Remove the foil from the pieces of beef. Serve on plates and drizzle with the tomato sauce. Enjoy your meal!
