Stuffed and Braised Turkey Wings
Ingredients
- Duck wings 6 pieces
- Pork fat 5 oz
- Pork Mince 10 oz
- Onion 1 head
- Carrot 1 piece
- Butter 0 oz
- Bouquet Garni 0 oz
- Dry White Wine 5 fl oz
- Chicken Broth 5 fl oz
Step-by-Step Guide
Step 1
Scald and clean the wings. Carefully remove the bones without damaging the skin. Stuff with chicken mince, wrap in a thin strip of pork fat, and secure with kitchen twine or regular string.
Step 2
Grease a skillet with butter and line it with strips of pork fat, then place the onion, sliced into rings, and the carrot, sliced into rounds; add the bouquet garni, and place the wings on top. Season with salt and pepper and cook on low heat for 15 minutes.
Step 3
Pour in 200 ml of dry white wine or Madeira, remove the lid, and reduce until dry. Add the chicken broth and bring to a boil. Cover and cook for 40 minutes in the oven at 390°F.
Step 4
Transfer the cooked wings to a rack to drain excess fat, remove the string and strips of pork fat, and glaze in the oven at 480°F.
