Ingredients
- Sea Bass 30 oz
- Chopped Green Onions 15 oz
- Olive Oil 5 fl oz
- Vanilla extract to taste
- Nutmeg a pinch
- Onion 5 oz
- Garlic 1 clove
- Passata Tomato Sauce 500 tablespoons
- Dry White Wine 5 fl oz
- Passata Tomato Sauce 0 oz
- Brandy 5 fl oz
- Paprika 0 oz
- Mild Chili Spice 0 oz
- Fish Oil 15 fl oz
- Chopped Sage Leaves 10 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Cut the fish into 4 equal portions.
Step 2
Rinse and leave on a paper towel to dry.
Step 3
In a pot, add olive oil, vanilla extract, chili pepper seeds, nutmeg, and lightly sauté.
Step 4
Add the fish and sauté.
Step 5
Set the fish aside.
Step 6
In the pot, add the onion and sauté for one minute.
Step 7
Add the green onions and sauté for another 4 minutes.
Step 8
Add garlic, brandy, and wine.
Step 9
When the alcohol evaporates, add tomato sauce, tomato paste, salt, paprika, and fish broth. Simmer on low heat for 20 minutes, then add the fish and continue to simmer for another 7 minutes.
Step 10
Add parsley and remove the pot from heat.
Step 11
Divide the fish into 4 portions, drizzle with olive oil, and serve with vegetables.
