Stewed zucchini with squash blossoms
Ingredients
- Canola Oil 1 tablespoon
- Onion 1 head
- Garlic 1 clove
- Scotch bonnet pepper 1 piece
- Zucchini 2 pieces
- Tomato 1 piece
- Coarse Salt to taste
- Ground Black Pepper to taste
- Dried Epazote Leaves 0 oz
Step-by-Step Guide
Step 1
Heat the oil in a skillet over medium heat. Add the onion and sauté, stirring, until softened (about 2 minutes).
Step 2
Add the garlic and pepper and sauté, stirring, for about 1 minute until fragrant.
Step 3
Add the zucchini and simmer covered, stirring occasionally, for about 3 minutes until softened. Add the tomato and continue to simmer, stirring, for another 5 minutes.
Step 4
Remove from heat, add the epazote, squash blossoms, salt, and pepper; let cool for 5 minutes and serve.
