Stewed Potatoes with Hot Peppers
Ingredients
- Potatoes 15 oz
- Canola Oil 3 tablespoons
- Onion 1 head
- Garlic 3 cloves
- Scotch Bonnet Peppers 3 pieces
- Chopped Cilantro 4 tablespoons
- Coarse Salt to taste
- Dried Epazote Leaves 0 oz
Step-by-Step Guide
Step 1
Place the potatoes in a pot and cover with water; bring to a boil and cook until tender, about 20 minutes. Drain the water and set aside.
Step 2
Heat the oil in a skillet over medium heat. Add the onion and sauté, stirring, until lightly caramelized (about 12 minutes). Add the garlic and peppers and sauté, stirring, for about 2 minutes.
Step 3
Add the potatoes and stew, stirring, until the potatoes are soft (about 10 minutes). Remove from heat and add the epazote; season with salt.
