
Stewed Potatoes with Fresh Mushrooms

Description
Potatoes can also be prepared with dried mushrooms. In this case, the mushrooms should be boiled beforehand, chopped, and then sautéed with onions. Some of the mushroom broth can be used for stewing the potatoes, and the rest can be used for soup.
Ingredients
- Salad Potatoes 25 oz
- Fresh Mushrooms 20 oz
- Onion 2 pieces
- Sour Cream 5 tablespoons
- Parsley ½ bunch
- Vegetable Oil 3 tablespoons
Step-by-Step Guide
Step 1
Clean and rinse the fresh mushrooms, blanch them in boiling water, chop, and sauté in a pan with the chopped onion.
Step 2
Peel the potatoes and cut them into wedges, sauté, and place them in a pot with the sautéed mushrooms, adding water to cover, salt, bay leaf, pepper, and 1–2 sprigs of parsley. Cover the pot and stew on low heat for 25–30 minutes. You can add 1–2 tablespoons of sour cream to the potatoes.
Step 3
When serving, remove the parsley sprigs and bay leaf, and sprinkle the potatoes with chopped herbs.
