Ingredients

  • Shredded Coconut 3 tablespoons
  • Cumin Seeds 1 teaspoon
  • Garlic 2 cloves
  • Green Chili Pepper 1 piece
  • Red Onion 1 head
  • Coarse Salt to taste
  • Coconut Oil ¼ cup
  • Black Mustard Seeds 1 tablespoon
  • Turmeric 2 teaspoons
  • Green Papaya 1 piece
  • Dried Red Pepper ½ teaspoon

Step-by-Step Guide

Step 1

Combine coconut, cumin seeds, garlic, chili, half of the onion, and salt in a food processor and blend to a paste consistency.

Step 2

Heat the oil in a large skillet over medium heat.

Step 3

Sauté the mustard seeds until they start to pop, about 1–2 minutes.

Step 4

Sauté the remaining onion until golden brown, about 4–6 minutes.

Step 5

Add turmeric, papaya, and salt; cover and simmer for about 15 minutes until the papaya begins to soften.

Step 6

Add the prepared coconut mixture, dried spicy pepper, and curry leaves; simmer uncovered, stirring occasionally, until the papaya is tender and most of the liquid has evaporated, about 18–20 minutes.
