Description

Pork with prunes is one of the most successful culinary duos. Here, it’s joined by rutabaga and potatoes. All of this is slowly simmered in a large heavy pot, soaking up the flavors of honey and meat juices, and served with a generous dose of cilantro.

  • Boneless pork shoulder 0 lbs
  • Onion 1 head
  • Garlic 6 cloves
  • White Vermouth 5 fl oz
  • Rutabaga 20 oz
  • Potato 20 oz
  • Honey 1 tablespoon
  • Pitted Wild Apricots 5 oz
  • Vegetable Oil 0 fl oz
  • Chicken Broth 15 fl oz
  • Cilantro 0 oz

Step-by-Step Guide

Step 1

Cut the pork shoulder into large cubes and sear on all sides in vegetable oil in a deep skillet until golden brown. Then add finely chopped onion and continue to sauté everything together for another five minutes, after which pour in the wine and simmer until the alcohol has almost completely evaporated.

Step 2

Next, add the coarsely chopped turnip and potatoes, pour in the broth, and add the prunes to the saucepan. Cover with a lid and simmer the meat until cooked through, which will take about an hour.

Step 3

Five minutes before it's done, add honey to the saucepan, and at the very end, season the stew with salt and pepper, stir in finely chopped cilantro, and serve immediately.
