Steamed Pork with Vegetable Curry

Ingredients

  • Pork Blood 5 oz
  • Red Curry Powder 2 tablespoons
  • Coconut Milk 10 fl oz
  • Banana Leaves 1 piece
  • Fish Oil 2 tablespoons
  • Chinese green beans 10 oz

Step-by-Step Guide

Step 1

Collect the 'oil' from the coconut milk.

Step 2

In a large bowl, mix finely chopped pork, coconut milk, curry paste, the soaked and chopped kaffir lime leaf, and fish sauce. Taste to see if more sugar or fish sauce is needed; you won't be able to add seasonings while steaming. The sauce should be sweet, spicy, but with a hint of saltiness.

Step 3

Line a container with foil that will later be placed in the steamer. Place washed and dried vegetables (Chinese cabbage or spinach and leek in any combination) in the center, then cover with the pork in sauce and top with fresh coriander leaves.

Step 4

Steam for 20 minutes. Serve with 4 tablespoons of coconut 'oil' drizzled on top.
