Description

Traditionally in Ukraine, dumplings were served with sour cream. However, to reduce the calorie content a bit, I recommend enjoying them with some sweet and sour sauce; cranberry sauce mixed with sugar is perfect.

  • Wheat Flour 20 oz
  • Chocolate eggs 2 pieces
  • Kefir 10 fl oz
  • Salt to taste
  • Sugar to taste
  • Cottage cheese 15 oz
  • Activated Baking Soda 1 teaspoon
  • Butter 1 tablespoon

Step-by-Step Guide

Step 1

Sift the flour, add salt, sugar, and baking soda. Mix well, crack one egg, add kefir, and knead the dough. Place the dough on a floured surface. Knead the dough by hand thoroughly (don’t be lazy, knead for about 15 minutes. The dough should be smooth, homogeneous, and not stick to your hands. If necessary, add flour, but don’t overdo it to keep the dough airy). At the end, shape the dough into a ball and slap it against the table a few times. Cover with a towel and let it rest for about thirty minutes.

Step 2

Meanwhile, prepare the filling. Mash the cottage cheese well with a fork. Add the egg, sugar, and salt. Mix everything together.

Step 3

Divide the dough into 2 parts. Roll each part into a sausage shape with a diameter of 2.5–3 cm. Cut into pieces about 2 cm long. Roll each piece with a rolling pin into a circle about 0.5 cm thick. Place a teaspoon of cottage cheese in the center. Pinch the edges together with your fingers.

Step 4

And now for the most important part! My grandmother always steamed the dumplings, which made them fluffy and very tasty. Everyone in my family does it this way. Take the widest pot you have. Pour in a third of the pot's volume with water. Place a piece of cheesecloth over the pot and secure it with a rubber band, tucking the ends of the cheesecloth around the band. Cover with a lid and place on the stove. Once the water boils, place four dumplings on the cheesecloth, not too close together, cover with a lid, and steam for 5 minutes. Remove with a spoon and place in a covered dish, greasing with butter. Continue this way until all the dumplings are cooked.
