Steamed Dorado in Nori Leaves
Ingredients
- Dorado 20 oz
- Dried Nori Seaweed 1 piece
- Soy Sauce 0 fl oz
- Chives 0 oz
- Garlic 1 clove
- Meyer Lemon Juice 0 fl oz
- Citrus Zest Mix 1 piece
- Olive Oil 0 fl oz
Step-by-Step Guide
Step 1
Fillet the dorado, removing the bones, and cut each fillet in half lengthwise. Brush the 20x20 cm nori leaves with soy sauce until soft. Wrap a quarter of the fillet in each leaf. Place in a steamer for 10 minutes.
Step 2
Mix all the ingredients for the sauce, except for the oil. While constantly whisking the sauce, gradually add truffle or olive oil. Serve the sauce separately.
