Steamed Cod with Aromatic Broth
Ingredients
- Star anise 1 piece
- Basil 2 bunches
- Cod fillet 2 pieces
- Olive Oil to taste
- Ocean salt to taste
- Ground Black Pepper to taste
- Coriander essential oil 30 pieces
- White Pepper (whole) 0 oz
- Vegetables 20 oz
- Fish Oil 15 fl oz
- Lemon 2 pieces
- Cilantro 20 pieces
- Parsley 1 bunch
- Lemongrass 3 pieces
Step-by-Step Guide
Step 1
For the broth, mix the spices and salt together using a knife or in a mortar and pestle. Place them in a pot with the same diameter as the steaming container for the fish. Add the remaining broth ingredients to the pot. Bring to a boil over high heat, then cover with a lid and simmer for 10 minutes. This will allow the broth to develop its rich aroma, which will partially transfer to the fish.
Step 2
Make a bed of basil leaves in the steaming container. Generously salt and pepper the fish (don't be afraid to use a lot of salt, as it will be absorbed into the skin, which will need to be removed later), and drizzle with olive oil. Carefully place the fillet on the basil leaves, cover with a lid. Place it over the pot with the broth, simmering on low heat. Leave to steam for 8 minutes, until the fish skin can be easily removed.
Step 3
Serve the hot cod without the skin, drizzled with olive oil and sprinkled with sea salt and freshly ground black pepper to taste.
