Steaks with Pink Pepper Sauce
Ingredients
- Butter 0 oz
- Vegetable Oil 1 tablespoon
- Dry White Wine 5 fl oz
- Brandy 2 tablespoons
- Veal Tenderloin 30 oz
- Campbell's Beef Broth 5 fl oz
- Whipped Cream 5 fl oz
- Green peppercorns 2 tablespoons
Step-by-Step Guide
Step 1
Pour the wine and brandy into a skillet and simmer for 4 minutes, or until reduced by half. Add the beef broth and reduce by half again. You should have about 125 ml of sauce.
Step 2
Meanwhile, dry and slightly crush the pink peppercorns. Mix them with the sauce and cream and cook until thickened.
Step 3
Place the meat on warm plates and drizzle with the sauce. Serve with a green salad.
Step 4
In a large skillet, heat the butter and vegetable oil and fry the meat cut into 4 steaks for 3-4 minutes on each side over high heat. Remove from the skillet, cover, and keep warm.
