
Steak with Pepper Sauce

A French classic. It's less about the steak and more about the sauce that accompanies it. One of the most famous and versatile complements to meat, its foundation includes pepper, cream, and brandy.
Ingredients
- Steaks 2 pieces
- Vegetable Oil 0 fl oz
- Shallot 1 piece
- Green peppercorns 2 spoons
- Butter 0 oz
- Brandy 0 fl oz
- Campbell's Beef Broth 0 fl oz
- Cream 0 fl oz
- Salt to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.

Crush the pepper in a mortar.
Step 3
In a small saucepan, melt the butter over medium heat.
Step 4
Sauté the chopped shallots for 2 minutes.
Step 5
Pour in the brandy and let it evaporate for another 2 minutes, then add the broth and pepper, bring to a boil, and cook for an additional 2 minutes.
Step 6
Pour in the cream while stirring, and bring to the consistency of liquid sour cream, then remove from heat.
Step 7
Season the steaks with salt.
Step 8
Heat vegetable oil in a skillet. Sear the steaks on all sides until golden brown.
Step 9
Towards the end of cooking, add 30 grams of butter and baste the steaks with the hot melted butter. If necessary, finish cooking the steaks in the oven at 355°F.
Step 10
Drizzle the steaks with pepper sauce.
Step 11
Serve.
