Steak with Grilled Onions

Ingredients
- Steaks 4 pieces
- Romaine lettuce 4 pieces
- Green onion tops 20 heads
- Tarragon 0 fl oz
- Salt 0 oz
- Water 0 fl oz
- Whole egg 0 oz
- Green Butter 10 oz
- Sugar to taste
Step-by-Step Guide
Step 1
Grill the steaks for 2–3 minutes on each side.
Step 2
Briefly blanch the lettuce leaves and wrap them around the steaks, hold on the grill for another minute.
Step 3
For the sauce: mix vinegar, salt, water, and a little sugar, add the yolks and green oil.
Step 4
Place a portion of steak in a lettuce leaf on a plate. Serve the mousse sauce separately, and you can garnish the dish with charred young onions.
