
Steak with Chanterelles

Ingredients
- Steaks 4 pieces
- Green peppercorns 80 pieces
- 33% Cream 40 fl oz
- Pickled Chanterelles 15 oz
- Olive Oil 5 fl oz
- Butter 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
First, prepare the sauce. Lightly crush the peppercorns in a mortar.
Step 2
Heat the skillet and warm the pepper on it. This is necessary to release its aromas and flavors.
Step 3
Pour the cream over the peppers.
Step 4
Add the butter.
Step 5
Simmer the sauce over medium heat for 8–10 minutes, stirring constantly.
Step 6
Remove the sauce from the heat.
Step 7
Rinse the steaks and pat them dry with a paper towel. Do the same with the mushrooms.
Step 8
Heat the skillet and sear the meat on both sides in olive oil.
Step 9
Five minutes before the steaks are done, add the chanterelles to the skillet and sauté them in the meat juices.
Step 10
Cover the skillet with a lid, remove it from the heat, and let the meat rest for 3 minutes.
Step 11
Place the steak on a plate and drizzle it with sauce.
Step 12
Season with salt and pepper, then serve!
