Squid with Shrimp and Green Beans
Main Dishes • Spanish
Description
You can easily do without wine. Instead of green beans, regular canned peas will work. But add them at the very end, otherwise they will fall apart. If you don’t overdo it with the beans, rice will make a good side dish.
Ingredients
- Peeled Cooked Shrimp 10 oz
- Squid 2 pieces
- Scallions 3 pieces
- Dried lima beans 10 oz
- Garlic 2 cloves
- Dry White Wine 5 fl oz
- Chopped Sage Leaves 2 tablespoons
- Olive Oil 5 tablespoons
Step-by-Step Guide
Step 1
Wash the squid and cut them into rings. If they were frozen, dry them well with paper towels.
Step 2
Slice the onions into rings. Chop the garlic. Sauté in a pan for less than a minute. During this time, the onions will become soft, and the garlic will not burn.
Step 3
Add the squid and cook until golden. Reduce the heat, pour in the wine, and let the alcohol evaporate.
Step 4
Then add the beans and simmer for about 5 minutes. Fresh beans will need more time—about 6–8 minutes.
Step 5
Add the shrimp to the beans. If they are frozen, rinse them under cold water and dry them first. After a couple of minutes, add salt, black pepper, parsley, and lemon juice.
