Squid stewed with vegetables
Ingredients
- Squid 3 pieces
- Eggplants 3 pieces
- Orange Bell Peppers 2 pieces
- Onion 2 pieces
- Salt to taste
- Lemon-Pepper Mix to taste
- Olive Oil 2 tablespoons
- Grated Ginger Root to taste
Step-by-Step Guide
Step 1
Thaw the squid and cut it into rings.
Step 2
Peel, wash, and slice the onion into half rings.
Step 3
Wash the eggplants, remove the stem. Cut them in half lengthwise and then crosswise. Slice into thick strips.
Step 4
Wash the bell peppers, clean, and slice into half rings. Small ones can be sliced into rings.
Step 5
Heat a skillet over medium heat, add sunflower oil, and place the squid in it. Season with salt and pepper, add ginger. Stir-fry for 3–5 minutes.
Step 6
Add half of the eggplant and the onion to the squid. Season with salt and pepper.
Step 7
Layer the remaining eggplant and bell pepper on top. Season with salt. Cover the skillet with a lid and stew everything in its own juice for 20–30 minutes until the vegetables are cooked!
Step 8
Stir the contents of the skillet gently during cooking. Add salt and spices as needed.
Step 9
If the vegetables release little liquid, add a bit of water.
Step 10
Serve, garnished with herbs.
