Ingredients

  • Herbs 20 oz
  • Squid 25 oz
  • Olive Oil 5 fl oz
  • Garlic 3 cloves
  • Onion 1 head
  • Celery stalk 2 pieces
  • Carrot 1 piece
  • Mild Chili Spice 1 piece
  • Dry White Wine 5 fl oz
  • Baking Tomatoes 15 oz
  • Chopped Sage Leaves 3 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Clean the squid well and cut the bodies into 2.5 cm thick rings. If the tentacles are large, cut them in half. Rinse all the pieces under water.

Step 2

Heat the olive oil in a large heavy pot and add the finely chopped onion, carrot, and celery. Cook until the vegetables are almost soft.

Step 3

Add the squid pieces, minced garlic, and chili, and cook for another 1-2 minutes.

Step 4

Pour in the white wine and continue to cook over medium heat until almost all the wine is absorbed.

Step 5

Add the chopped canned tomatoes and parsley, and season with salt and pepper.

Step 6

Bring to a boil, then reduce the heat and simmer for 20-25 minutes.

Step 7

Add the chopped herbs (choose herbs to taste; basil will make the dish spicier, rosemary will add freshness, but go with your favorite aromas) and simmer for another 10 minutes.

Step 8

Taste and add more salt and pepper if needed. Serve on individual plates with pieces of crusty bread.
