Squid in Garlic Sauce

Ingredients

  • Squid 40 oz
  • Butter 0 oz
  • Olive Oil 1 tablespoon
  • Garlic 4 cloves
  • Parsley 1 bunch
  • Dry White Wine 5 fl oz
  • Lemon 1 piece
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Prepare the squid. If using fresh unpeeled squid, it is very important to clean them well: gut them, remove the cartilage, peel the outer skin, then cut them lengthwise into 2 parts and remove the inner membranes, after which rinse in cold water and cut into pieces of 3x4 cm. Rinse the tentacles as well, remove the skin and suckers by scraping them with a knife. This will take the most time in preparing the entire dish — about 10-15 minutes, so if a side dish is to be served with the squid, it is better to prepare it before the squid is cooked, as they need to be served immediately after cooking, and DO NOT OVERCOOK, to prevent the meat from becoming rubbery.

Step 2

Heat a skillet, add the butter, and once it melts, add 3 cloves of garlic, cut in half lengthwise, and sauté for literally 1 minute.

Step 3

Then add the squid to the skillet, pour in the white wine, reduce the heat, and cover with a lid for 1-2 minutes.

Step 4

After that, add finely chopped parsley and garlic, squeeze the juice of 1 lemon (about 2 tablespoons), season with salt and pepper, and grate the lemon zest on top, mix everything, remove from heat, cover with a lid, and let it sit for another 1-2 minutes. After which, mix again and serve.
