- Carrot 5 oz
- Onion 5 oz
- Tomatoes 5 oz
- Garlic 2 cloves
- Oregano a pinch
- Parsley 0 oz
- Fresh Mint 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 0 fl oz
- Olives stuffed with lemon 0 oz
Step-by-Step Guide
Step 1
Dice the carrot into small cubes, and chop the onion, bell pepper, and tomatoes into cubes of the same size.
Step 2
Add the carrot to a hot skillet with olive oil. After a minute, add the onion, then the bell pepper another minute later, and after another minute, add the tomatoes. Remember to stir occasionally.
Step 3
Add a little water, season with salt and pepper, and simmer for 4-5 minutes. Towards the end of cooking, add finely chopped garlic, olives, and oregano.
Step 4
Remove from heat and stir in the finely chopped parsley and mint.
