Spinach with Eggs
Ingredients
- Fresh basil leaves 5 oz
- Onion 1 piece
- Chicken Egg 2 pieces
- Olive Oil 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Parmesan Cheese 5 oz
Step-by-Step Guide
Step 1
Peel and finely chop the onion.
Step 2
Grate the cheese on a fine grater.
Step 3
Heat the olive oil in a skillet and sauté the onion over medium heat for 2–3 minutes.
Step 4
Add the spinach. Season with salt and pepper.
Step 5
Sauté for another 2–3 minutes until the spinach is soft. Add the cheese and remove from heat.
Step 6
Mix well and transfer to small baking dishes.
Step 7
Crack an egg on top.
Step 8
Place in the oven and bake at 390°F until the egg is cooked (15–20 minutes).
