Ingredients
- Olive Oil 1 tablespoon
- Ocean salt to taste
- Sun-Dried Tomatoes 1 piece
- Coconut Milk ½ can
- Fresh basil leaves 15 oz
- Grated Ginger Root 1 tablespoon
Step-by-Step Guide
Step 1
Finely chop the ginger and sauté in olive oil for 30 seconds.
Step 2
Add the chopped tomato and sauté for 1 minute.
Step 3
Add the spinach, season with salt. Stew for about 2 minutes until the spinach is tender.
Step 4
Pour in the coconut milk and simmer on low heat until most of the liquid evaporates.
