Ingredients

  • Butter 1 teaspoon
  • Spinach 5 oz
  • Farm fresh eggs 4 pieces
  • Wheat Flour 2 tablespoons
  • English Dry Mustard a pinch
  • Chives 1 tablespoon
  • Chervil 1 bunch
  • Goat cheese 0 oz
  • Yellow Cherry Tomatoes 3 pieces
  • Scallions 2 pieces
  • Basil 1 tablespoon
  • Olive Oil 1 tablespoon
  • Balsamic Vinegar 1 tablespoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 465°F. Place the Swiss dough on a baking sheet and grease it with butter. In a saucepan, heat the oil and sauté the spinach for about a minute, stirring. Sprinkle with salt and pepper. Drain any excess oil.

Step 2

Whisk the egg whites until frothy, then gradually add the sifted flour.

Step 3

In a separate bowl, mix the egg yolks with the mustard powder. Pour this mixture into the flour and mix thoroughly. Spread it over the dough and distribute evenly.

Step 4

Sprinkle with herbs, then layer the spinach and diced goat cheese on top. Place in the oven for 8 minutes.

Step 5

Slice the tomatoes into wedges and place them in a salad bowl, add finely chopped onions and basil, drizzle with vinegar and olive oil. Add seasonings and mix well.

Step 6

Remove the baking sheet from the oven. Carefully transfer the hot layers onto a towel to avoid burning your hands, and quickly roll it up. Slice and serve with the salad.
