Spinach and Chickpea Curry
Ingredients
- Red curry paste 2 tablespoons
- Onion 1 head
- Cherry Tomatoes 15 oz
- Canned chickpeas 30 oz
- Spinach 10 oz
- Basmati rice to taste
Step-by-Step Guide
Step 1
Heat the curry paste in a large skillet. Add the onion and cook for 2 minutes until softened.
Step 2
Add the canned tomatoes and let simmer for 5 minutes or until the sauce thickens.
Step 3
Add the chickpeas and some seasoning. Simmer for 1 minute. Remove the skillet from heat and add the spinach. Season, add lemon juice. Serve with basmati rice.
