Ingredients
- Potatoes 2 pieces
- Cumin Seeds 1 teaspoon
- Sunflower Oil 2 teaspoons
- Egg noodles 0 oz
- Lemon Zest 1 tablespoon
- Lemon Juice 1 tablespoon
- Red Wine Vinegar 2 teaspoons
- Spinach 0 oz
- Avocado 1 piece
- Red Onion ½ head
Step-by-Step Guide
Step 1
Preheat the oven to 200°C. Coat the potato pieces in cumin, 1 teaspoon of oil, and spices.
Step 2
Place on a baking sheet and roast for 20-25 minutes until cooked and golden brown.
Step 3
Meanwhile, cook the noodles according to the package instructions, then drain the water. Fry the noodles until crispy.
Step 4
When the potatoes are ready, add 1 teaspoon of oil, lemon zest and juice, red wine vinegar, and a bit of seasoning.
Step 5
Transfer the potatoes to a bowl with spinach, avocado, and red onion, drizzle with the dressing, then gently mix (it's easiest to do this by hand).
Step 6
Serve on plates and crumble the crispy noodles on top.
