  • Garlic 1 head
  • Adjika 3 tablespoons

Step-by-Step Guide

Step 1

Clean the beef from membranes and fat, and stuff it with garlic cloves that have been peeled and cut into quarters.

Step 2

Make a deep incision and insert a piece of butter into it. Young beef or veal is tender and lean, and the butter will help it retain its juiciness. Thoroughly coat the piece of meat with adjika; the thicker the layer, the spicier the roast beef will be. Regular store-bought spicy adjika is suitable. Be sure it contains no tomatoes.

Step 3

Wrap the fragrant piece of meat in aluminum foil and bake in a preheated oven at 390°F for about half an hour. You can check for doneness with a wooden toothpick—the juice should be clear but still pink. The meat will remain not fully cooked.

Step 4

Turn off the oven and let the meat rest in the cooling oven for another hour. After that, carefully unwrap the foil cocoon to avoid spilling any meat juice. The juice will serve as a sauce for the thinly sliced roast beef.
