Spicy Pork with Zucchini and Corn Southwest Style
Ingredients
- Olive Oil 3 tablespoons
- Pork tenderloin 20 oz
- Orange Bell Peppers 1 piece
- Courgette 1 piece
- Spanish onions 1 head
- Garlic 1 clove
- Habanero Pepper 2 pieces
- Sweet Corn Sticks 1 cup
- Mild Chili Spice 1 tablespoon
- Salt to taste
- Lime Juice 1 tablespoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a skillet, heat the olive oil and add the sliced pork. Sauté for about 1 minute until browned.
Step 2
Then add the sliced red pepper, julienned zucchini, sliced red onion, minced garlic, corn kernels, and chopped jalapeños. Stir and sauté for 2 minutes or a little longer.
Step 3
Add the chili, lime juice, salt, and pepper. Stir and cook for another 1 minute.
