Spicy Lamb with Dill and Spinach

Ingredients

  • Olive Oil 2½ tablespoons
  • Garlic 2 cloves
  • Oregano 1 teaspoon
  • White Pepper (whole) ¼ teaspoon
  • Spinach 20 oz
  • Lamb Shoulder 0 lbs
  • Dill 5 sprigs
  • Natural Yogurt ½ cup
  • Ground Cinnamon ½ teaspoon
  • Meyer Lemon Juice ½ teaspoon
  • Salt to taste
  • Ground clove a pinch
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Mix olive oil with finely chopped garlic, dried oregano, cinnamon, cloves, salt (¾ teaspoon), and black pepper.

Step 2

Coat the lamb chops in the spice mixture and grill for 6-7 minutes.

Step 3

While the meat is grilling, heat 1 tablespoon of oil in a pot over medium heat, and when it sizzles, add the spinach. Stirring constantly, cook for 3-4 minutes until the spinach begins to wilt.

Step 4

Drain the spinach in a colander and press lightly to remove excess water.

Step 5

Return the spinach to the pot, add finely chopped dill, Greek yogurt, lemon juice, and cook over medium heat until the yogurt is warm. Remove from heat without boiling, and immediately season with salt and pepper to taste.

Step 6

Serve the spinach with dill as a side dish to the lamb.
