- Rack of Lamb 24 pieces
- Butter 5 oz
- Olive Oil 0 fl oz
- Rose water 0 fl oz
- Ground Cinnamon 1 tablespoon
- Ground Cumin 1 tablespoon
- Ground Nutmeg 1 tablespoon
- Ground coriander 1 tablespoon
- Salt to taste
Step-by-Step Guide
Step 1
In a large skillet, heat the butter and olive oil, and sear the lamb ribs until cooked through — about three minutes on each side.
Step 2
Transfer the ribs to a plate, and in the fat left in the pan, sauté the spice mixture for a minute. Then, pour in rose water (or cognac, though that's not entirely Middle Eastern) and let it simmer for a minute.
Step 3
Return the browned lamb ribs to the skillet, allow them to soak in the sauce for about a minute, season with salt, and serve.
