Description

You can use Adyghe cheese. For a vegetarian option, you can substitute the cheese with tofu and the butter with vegetable oil. It is best served with steamed or sweet rice.

Ingredients

  • Homemade Cheese 15 oz
  • Grated Ginger Root 5 oz
  • Garlic 3 cloves
  • Butter 0 oz
  • Coriander essential oil 2 tablespoons
  • Turmeric 1 tablespoon
  • Toasted Cumin Seeds ½ teaspoon
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Add the cheese to the frying pan. Fry, stirring constantly, for 3–4 minutes over high heat until it firms up. Without removing from heat, sprinkle with curry and black pepper to taste. Fry until golden brown.

Step 2

Slice the ginger into thin strips. Cut the cheese into 1.5 cm cubes.

Step 3

Melt the butter over low heat. Add the ginger and garlic cloves. Keep over medium heat for 5–7 minutes to allow the oil to absorb the ginger flavor. Add coriander and cumin, increase the heat to maximum, and fry for 3–4 minutes.
