Ingredients
- Poultry 5 lbs
- Olive Oil 2 tablespoons
- Clarified Butter 2 tablespoons
- Onion 1 piece
- Garlic 2 cloves
- Red Grape Juice 1½ cups
- Brandy 3 tablespoons
- Passata Tomato Sauce 2 tablespoons
- Honey 3 tablespoons
- Cinnamon 1 piece
- Ground clove 3 pieces
- Bay leaf 2 pieces
- Salt to taste
- Ground Black Pepper to taste
- Grated Pecorino Pepato Cheese to taste
- Tomatoes 15 oz
Step-by-Step Guide
Step 1
First, clean the chicken, remove excess fat, and dry it with paper towels. Heat the olive oil and clarified butter in a large saucepan. Place the chicken pieces skin-side down and fry over medium heat until they turn light brown. Remove the chicken.
Step 2
Thinly slice the onion and sauté it in the remaining oil in the saucepan. Add the minced garlic and sauté for 1–2 minutes. Next, add the wine, tomato paste, chopped tomatoes, brandy, honey, cinnamon stick, cloves, bay leaves, salt, and pepper to taste. Bring the sauce to a boil and then simmer for about 5 minutes.
Step 3
Return the chicken to the saucepan and cook for about 10 minutes uncovered. Then cover with a lid and simmer on low heat for one hour, stirring occasionally.
Step 4
When serving, sprinkle with grated cheese.
