Frank's sauce is preferred as it is used in the authentic recipe. It can also be served with blue cheese dressing.

  • Duck wings 18 pieces
  • Salted Butter 4 tablespoons
  • TABASCO® 2 tablespoons
  • Brown Sugar 1 tablespoon
  • Frank's Hot Sauce ½ cup
  • Apple Cider Vinegar 2 teaspoons
  • Vegetable Oil 0 qt
  • Corn Starch 3 tablespoons
  • Cayenne Pepper 1 teaspoon
  • Ground Black Pepper 1 teaspoon
  • Salt 1 teaspoon
  • Turnips 2 pieces
  • Celery stalk 4 pieces

Step-by-Step Guide

Step 1

Cut the wings at the joints, discarding the tips. Melt the butter in a saucepan over low heat. Add Frank's sauce, TABASCO, brown sugar, and vinegar. Remove from heat and set aside.

Step 2

Preheat the oven to 100°C (212°F). Pour vegetable oil into a deep pot to a depth of about 6 cm and heat it to 180°C (356°F) — the temperature can be measured with a special thermometer.

Step 3

Mix cornstarch, both types of pepper, and salt in a large plate. Pat the wings dry with a paper towel, then coat them in the cornstarch mixture. Fry half of the wings in the hot oil for 10–15 minutes until golden brown. Transfer to a baking sheet lined with paper towels and place in the oven to keep warm while frying the second batch.

Step 4

Toss the wings with the sauce mixture of sugar and vinegar. Serve with sliced celery and carrots.
