Spicy Asian Chicken Wings
Ingredients
- Duck wings 18 pieces
- Soy Sauce ½ cup
- Honey 5 tablespoons
- Mirin 2 tablespoons
- TABASCO® 2 tablespoons
- Rice Vinegar for Sushi 1 tablespoon
- Ginger 0 oz
- Cilantro 0 oz
- Garlic 1 clove
- Vegetable Oil 0 qt
- Corn Starch 3 tablespoons
- Cayenne Pepper 1 teaspoon
Step-by-Step Guide
Step 1
Cut the wings at the joints, discarding the tips. Finely chop the cilantro and garlic, and grate the ginger. Transfer them to a bowl, then add the soy sauce, honey, mirin, TABASCO, vinegar, and set aside.
Step 2
Preheat the oven to 210°F. Pour about 6 cm of vegetable oil into a pot and heat it over high heat to 355°F — the temperature can be measured with a special thermometer.
Step 3
In a large bowl, mix the cornstarch and cayenne pepper. Pat the wings dry with a paper towel and coat them in this mixture. Place half of the wings into the hot oil and fry until golden, about 10–15 minutes. Transfer to a baking sheet lined with paper towels and place in the oven to keep warm. Fry the remaining wings in the same manner.
Step 4
Place the wings in the bowl with the marinade and let them sit for 1 minute before serving.
