
Spiced Roasted Lamb Leg

Ingredients
- Rack of Lamb 2½ kg
- Garlic 3 cloves
- Rosemary 1 tablespoon
- Thyme 1 tablespoon
- Olive Oil 2 spoons
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Buy a leg of lamb. If you don't plan to cook it immediately and store it in the refrigerator, take the meat out a couple of hours before cooking to allow its temperature to come to room temperature.
Step 2
Cut the garlic cloves in half to make six pieces.
Step 3
Using a knife, make small slits in the tender parts of the leg (six slits in total) and place half a clove of garlic in each one.
Step 4
Rub the leg with salt, pepper, thyme, and rosemary. Then drizzle with olive oil.
Step 5
Preheat the oven to 175°F.
Step 6
Place the leg on a baking sheet and put it in the middle of the oven for 30 minutes.
Step 7
Then increase the temperature to 120°C and bake for another 30 minutes.
Step 8
Next, increase the temperature to 180°C (350°F) and roast the leg of lamb for an additional 15 minutes. During this time, every 3–4 minutes, remove the roasting pan and baste the leg with its own juices.
Step 9
In total, the leg should be in the oven for 1 hour and 15 minutes.
Step 10
Remove the meat from the oven and let it rest for another 7 minutes.
