Spiced Rice with Almonds

Ingredients

  • Black peppercorns 1 tablespoon
  • Allspice 2 teaspoons
  • Cloves 2 teaspoons
  • Cinnamon stick 1 piece
  • Olive Oil 1 tablespoon
  • Blanched almonds 1 cup
  • Coarse Salt to taste
  • Basmati rice 2 cups
  • Chopped Parsley 0 oz

Step-by-Step Guide

Step 1

Heat the black pepper, allspice, cloves, and cinnamon in a large skillet over medium heat until fragrant, about 1-2 minutes. Let cool slightly, then transfer to a spice grinder and grind; set aside. Pour ¼ cup of oil into the skillet and heat over medium heat. Add the almonds and sauté for 3-5 minutes until golden brown. Transfer to a bowl and season with salt.

Step 2

Pour the remaining oil into the skillet and heat over medium heat. Add the rice and sauté, stirring occasionally, for 5-7 minutes. Add the spice mixture and 3½ cups of water; bring to a boil. Reduce the heat to low and cover, cooking for about 30 minutes until the rice is tender. Remove from heat and let sit for 10 minutes. Remove the lid and fluff the rice with a fork. Transfer to a serving dish, sprinkle with almonds and parsley.
