Spiced Pork Kebabs with Garlic Sauce
Ingredients
- Pork tenderloin 30 oz
- Nigella Seeds 2 teaspoons
- Coriander essential oil 2 teaspoons
- Olive Oil 4 tablespoons
- Garlic 4 cloves
- White bread 1 piece
- Meyer Lemon Juice 1½ tablespoons
- Lemon 1 piece
- Pide bread 4 pieces
Step-by-Step Guide
Step 1
Soak 8 wooden skewers in cold water for 1 hour. Cut the meat into small cubes. In a clean skillet, toast the fennel and coriander seeds for about 30 seconds, then grind them in a coffee grinder.
Step 2
Mix the ground spices with 1 tablespoon of olive oil and combine with the pork until it is fully coated in the spices. Cover and refrigerate for 2 hours.
Step 3
For the garlic sauce, mince the garlic and grind it in a mortar with 0.5 teaspoon of salt until it forms a paste. Remove the crust from the bread and tear it into pieces, soaking it in cold water. Gently squeeze the bread and add it to the garlic, mixing until it forms a paste. Gradually add the remaining oil, 1 tablespoon at a time, then add 3 tablespoons of boiling water, also 1 tablespoon at a time.
Step 4
Then stir in the lemon juice. Thread the meat onto the skewers and season well with salt. Preheat the grill and cook the kebabs for 10 minutes, turning occasionally. Lightly drizzle the meat with the sauce, and pour the remaining sauce into a serving dish. Serve with lemon wedges and warm pita.
