Spiced Fried Beef Ribs with Young Potatoes and Carrots
Ingredients
- Thick Beef Rib 5 lbs
- Olive Oil 2 tablespoons
- New Potatoes 30 oz
- Carrot 15 oz
- Salt 1 teaspoon
- Onion 2 heads
- Garlic 4 cloves
- Toasted Cumin Seeds 2 teaspoons
- Ground Black Pepper 1½ teaspoons
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Mix the minced garlic, cumin, and black pepper. Rub half of the mixture onto the meat. In the remaining mixture, add olive oil and salt. Place the meat on a baking sheet and put it in the oven for 1 hour 45 minutes to 2 hours.
Step 2
Meanwhile, in a large bowl, combine the halved potatoes, carrots, thinly sliced onion, and the remaining spice and oil mixture. Mix well and place in a baking dish. 60 minutes before the meat is done, put the dish with vegetables in the oven.
Step 3
Remove the meat from the oven and increase the temperature to 445°F. Roast the vegetables for another 15 minutes until tender and golden brown, stirring once.
Step 4
Slice the meat into pieces and serve with the vegetables.
