  • Duck Breast 2 pieces
  • Sitimy spice blend 2 teaspoons
  • Salt ½ teaspoon
  • Sugar ½ teaspoon
  • Udon Noodles 10 oz
  • Chicken Broth 0 qt
  • Spinach 0 oz
  • Scallions 4 stalks

Step-by-Step Guide

Step 1

Make small incisions in the skin of the duck breasts. Mix the spices, salt, and sugar and place them in a bowl. Lay the breasts on top, skin side down. Then place a plate on top and weight it down. Let it marinate in the refrigerator for 1 hour or overnight.

Step 2

Heat a grill pan over medium heat for 1-2 minutes until it starts to smoke. Cook the duck, skin side down, for 5 minutes, then flip and cook for another 3 minutes until done. Transfer to a plate and let rest for 5 minutes.

Step 3

Cook the noodles in boiling water until soft, about 2-3 minutes. Divide into 2 bowls. Bring the broth to a boil, add the spinach, and cook for 1 minute, then pour over the noodles. Season with salt and pepper. Thinly slice the duck breasts and place on top. Garnish with green onions.
