Spanish Marinated Pork Tenderloin
Ingredients
- Water 3½ cups
- Coarse Salt 0 oz
- Sugar ⅓ cup
- Champagne Vinegar ⅓ cup
- Crushed ice 1 cup
- Pork tenderloin 0 lbs
- Paprika 2 tablespoons
- Ground Black Pepper 1 teaspoon
- Chopped Sage Leaves 0 oz
- Garlic 2 cloves
- Chopped Sage Leaves 1 teaspoon
- Olive Oil 2 teaspoons
Step-by-Step Guide
Step 1
In a large bowl, mix water, salt, ¼ cup of sugar, and ¼ cup of sherry vinegar. Pour the marinade into a plastic bag, add ice and the meat. Mix well, seal tightly, and refrigerate for 3 hours, turning occasionally.
Step 2
In a bowl, combine paprika, 2 teaspoons of sugar, black pepper, chopped sage, thyme, and minced garlic.
Step 3
Preheat the grill.
Step 4
Pat the meat dry with a paper towel. Brush with olive oil and rub with the paprika mixture. Place on the oiled grill and brown on all sides for 6 minutes. Then move the meat to a cooler part of the grill and cook for another 20 minutes, turning until done.
Step 5
Transfer the meat to a plate, cover with foil, and let it rest for 5 minutes. Uncover, drizzle with vinegar, and serve.
