Spanish grilled onions with arugula salad
Ingredients
- Spanish onions 4 pieces
- Olive Oil 6 tablespoons
- Arugula 0 oz
- Parmesan Cheese 5 oz
- Salt to taste
- Meyer Lemon Juice 0 fl oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Leave the onions in their skins and cut them crosswise into 4 rings.
Step 2
Place on the grill, brush with olive oil, and season with salt and pepper.
Step 3
Position the grill pan 10 cm away from the heating element. Bake for 8–10 minutes.
Step 4
Slice the Parmesan cheese into thin shavings.
Step 5
Carefully flip the onions with a spatula. Season with salt, pepper, and drizzle with olive oil.
Step 6
Bake until cooked through. Remove from the grill and let cool slightly.
Step 7
Separate the onions into rings. Arrange a quarter of all the onion rings on a plate, top with the salad, Parmesan shavings, and more onion rings.
Step 8
Season with pepper, salt, and drizzle with olive oil and lemon juice.
Step 9
Serve warm, without mixing.
