
Spaghetti with Sardines and Pine Nuts

Description
In the original recipe, fennel is used instead of onion. Mackerel is a great substitute for sardines.
Ingredients
- Sardines 8 pieces
- Spaghetti 10 oz
- Toasted Sesame 5 oz
- Spanish onions 1 head
- Garlic 2 cloves
- Lemon 1 piece
- Chopped Sage Leaves 2 tablespoons
- Olive Oil 5 tablespoons
- Ground Black Pepper to taste
- Ocean salt to taste
Step-by-Step Guide
Step 1
Slice the onion into feathers. Toast the nuts in a dry skillet. Remove the dorsal fins and rib bones from the sardine fillets.
Step 2
Heat the oil in a skillet, sauté the onion until soft, then add the chopped garlic. Immediately after, add the fish and reduce the heat. Simmer for 4–5 minutes.
Step 3
Meanwhile, cook the pasta in the usual way.
Step 4
To the fish, add the previously grated zest of 1/3 lemon, the juice of 0.5 lemon, nuts, parsley, salt, and pepper.
Step 5
Once the spaghetti reaches the desired doneness, drain it in a colander, let the water drain, and then combine it with the fish. Gently mix. On the plate, sprinkle the dish with ground black pepper and the remaining parsley.
