  • Bacon 5 oz
  • Spaghetti 15 oz
  • Garlic 0 oz
  • Olive Oil 5 tablespoons
  • Ground Black Pepper to taste
  • Grated Pecorino Pepato Cheese 4 tablespoons

Step-by-Step Guide

Step 1

Preheat the oven to 430°F. Cut the bacon into 2x2 cm squares, place it on a baking sheet lined with parchment paper, and bake for 5–6 minutes until crispy. Collect the rendered fat.

Step 2

Cook the spaghetti in a sufficient amount of salted water until al dente. Peel the garlic cloves, cut each clove lengthwise into several pieces, and lightly sauté in olive oil in a deep skillet.

Step 3

Drain the cooked spaghetti, reserving 2–3 tablespoons of the cooking liquid. Add the spaghetti to the skillet with the garlic, and add the reserved liquid. Season with pepper and sprinkle with 2 tablespoons of Parmesan. Mix everything well and serve on individual plates. Top the dish with bacon and garnish with the remaining grated cheese. Optionally, drizzle the spaghetti with the fat rendered from the bacon.
