Spaghetti Bolognese with Soy Mince

Ingredients

  • Spaghetti 5 oz
  • Tomatoes 2 pieces
  • Onion ½ piece
  • Garlic 1 clove
  • Soy Meat 4 tablespoons
  • Basil to taste
  • Oregano a pinch
  • Olive Oil 2 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Dice the onion into small cubes. Chop the garlic finely.

Step 2

Pour olive oil into a pot or deep skillet. Add the onion and garlic to sauté.

Step 3

Dice the tomatoes into small cubes (if large), or cut cherry tomatoes in half. Add them to the pot. Cover with a lid and simmer until the tomatoes turn almost into a puree.

Step 4

When the tomatoes are ready, add the soy mince dry (you can see what it looks like in the photo, in a white bowl). It will absorb excess moisture and resemble fried ground meat. If it becomes too thick, you can add a couple of tablespoons of water. Simmer gently on low heat. Turn off the heat and let it sit on the stove to finish cooking the soy.

Step 5

Season to taste with salt, oregano, and freshly ground black pepper.

Step 6

While the soy is finishing, you can cook the spaghetti, remembering to salt the water.

Step 7

On the bottom of the plate — spaghetti. On top — sauce.
