Souvlaki in Pita with Sauce

Ingredients
- Natural Yogurt 5 oz
- Courgette 1 piece
- Dill 0 oz
- Garlic 2 cloves
- Veal 0 lbs
- Fresh basil leaves 0 oz
- Olive Oil 6 tablespoons
- Meyer Lemon Juice 2 tablespoons
- Dried Rosemary 1 tablespoon
- Salt to taste
- Pide bread 8 pieces
- Onion 1 head
Step-by-Step Guide
Step 1
Wash the cucumber and dry it.
Step 2
Then, without peeling, grate it on a coarse grater.
Step 3
Transfer to a metal sieve, mix with a pinch of salt, and squeeze out the juice. This can also be done using cheesecloth. Collect the juice in a bowl and set aside.
Step 4
Peel the garlic and press it through a garlic press.
Step 5
Rinse the dill sprigs and chop finely.
Step 6
Mix the dill, garlic, cucumber, and yogurt. Add salt to taste.

Rinse the meat, dry it, and cut it into portion-sized pieces.

For the marinade, combine the remaining cucumber juice, chopped basil leaves, olive oil, lemon juice, and oregano.

You can add a little salt, but remember that the cucumber juice already contains salt. Marinate for about 30 minutes.
Step 10
Thread the meat onto wooden skewers that have been soaked in water.

Grill over well-burned (to white ash) coals until browned, turning frequently.

When the meat is almost done, you can cover the skewers with the pita bread. The pitas will warm up and absorb the smoky aroma. Serve with the sauce and onion.
