Description
It's best to soak the chicken in milk for a few hours beforehand. The meat will become tender and juicier. Place the chicken in a bowl, add a tablespoon of salt, and pour in the milk. Cover with a lid or plastic wrap and leave it overnight or for a few hours in the refrigerator.

- Chicken bones 2 pieces
- Chicken Thighs 2 pieces
- Wheat Flour 5 oz
- Egg white 1 piece
- Milk 0 qt
- Cayenne Pepper 1 teaspoon
- Salt 1½ tablespoons
- Lard 20 oz
- Green Butter to taste
Step-by-Step Guide
Step 1
Transfer the contents of the bowl to a pot, place it over medium heat, bring to a boil, and cook the chicken until done. The milk will curdle, but don't worry about it — the final taste of the dish is what matters. Remove the chicken and let it cool.
Step 2
In a plastic container with a lid or in a plastic bag, mix the flour, cayenne pepper, and a teaspoon of salt, then coat each piece of chicken in this mixture. Next, dip it in the beaten egg and back into the mixture. Let the prepared chicken sit for 10–15 minutes. Meanwhile, melt the lard in a deep skillet and heat it until very hot.
Step 3
Place the pieces of chicken in the lard and fry them for one minute on each side, until they are crispy and golden brown. Serve immediately — the dish is great on its own or with a side of French fries, for example. You can garnish with lettuce leaves.
