Sole with Butter
Ingredients
- Sole fillets 5 lbs
- Cotton Oil 15 fl oz
- Wheat Flour 0 oz
- Lemon 1½ pieces
- Chopped Sage Leaves 2 tablespoons
- Butter 5 oz
- Salt to taste
Step-by-Step Guide
Step 1
Heat the oil in a deep fryer or a deep skillet to 180–375°F (you can check the temperature by using a cube of yesterday's bread: at this temperature, it should brown within 30 seconds).
Step 2
Lightly season the fillets with salt on both sides and coat them in flour, shaking off the excess. Fry the fillets in the hot oil two at a time until golden brown. Once the fish pieces are removed from the oil, let them drain excess fat and keep the cooked fillets warm while preparing the rest.
Step 3
Transfer the cooked fish to a warmed serving dish, sprinkle with parsley, and garnish with half a lemon cut into wedges.
Step 4
Melt the butter in a saucepan without letting it darken. Skim off the foam with a spoon. Stir in the lemon juice and drizzle this sauce over the fish. Serve immediately.
