
Soldier's Pea Soup

Description
Recipe from the book "The Witcher: An Unofficial Cookbook" by Olivia Smith. On one hand, one could consider the army as a separate social class. On the other hand, the common soldiers of the North were recruited from peasant backgrounds, and their meals did not differ much from the familiar rustic soups and stews. This pea soup, known as 'grochówka' in Polish, is mentioned several times in the Witcher saga. The first time is when Geralt dreams of such a soup in the camp of Marshal Vissigerd and is willing to give up all the sturgeon and all the truffles in the world for it. The second time is when, in Toussaint, in the courtyard of Castle Zubarran, Geralt finally gets the chance to taste this soup.
Ingredients
- Smoked pork knuckle 20 oz
- Pea shoots 10 oz
- Semi-Smoked Sausage 10 oz
- Chorizo 10 oz
- Lard 5 oz
- Potato 5 pieces
- Carrot 2 pieces
- Garlic 2 cloves
- Bay leaf to taste
- Ground Black Pepper to taste
- Salt to taste
- Marjoram to taste
- Scallions to taste
Step-by-Step Guide
Step 1
Cut the ribs.
Step 2
Place them in a pot and cover with 2 liters of water.
Step 3
Bring to a boil and skim off the foam.
Step 4
Add bay leaf and allspice. Simmer on low heat for about 1 hour.
Step 5
While the broth is simmering, cut the lard, bacon, and sausage into pieces of your choice.
Step 6
Slice the potatoes.
Step 7
Carrot - cut into wedges or rounds.
Step 8
After 1 hour, rinse the peas and add them along with the carrots to the pot with the ribs.
Step 9
Cook until the peas are tender.
Step 10
Then remove the ribs from the pot and take the meat off them.
Step 11
Fry the bacon and sausage until crispy, then add them to the peas, draining off any excess fat first.
Step 12
Fry the bacon and add it there as well.
Step 13
Chop the garlic and add it to the pot. Next, add the potatoes and meat.
Step 14
Cook the soup until the potatoes are tender.
Step 15
Season with salt, add marjoram and pepper.
Step 16
Serve with green onions.
